TAHINI TREAT

     After spending the last two weeks eating this awesome treat everyday (and sometimes two and three times a day) I've decided it is finally time to share the recipe with you. I'm warning you though, it is so good, and apparently very addictive. This should really come as no surprise to me though as I do recall being quite addicted to this yummy halvah I use to buy at the health food store years ago. I used to eat that stuff like it was going out of style too. I must have a thing for tahini. Luckily tahini is quite nutritious - for example it is a very good source of fibre, protein, vitamins and minerals including iron, magnesium, phosphorus, potassium, copper and manganese. It's good for your heart, it boosts nutrient absorption, it helps you burn fat, it fights cancer - it's a super food! But most importantly it tastes delicious and perfectly binds the fruit, raisins and hemp seeds together - making it spoonable and crazy yum.


TAHINI TREAT

1 apple, diced
1 banana, peeled and chopped
2 Tbsp raisins
3- Tbsp hemp nuts
about 3-4 Tbsp tahini

Method: Combine all ingredients and enjoy with a spoon.

TAHINI MISO SPREAD

     If you're one of those people who has to avoid dairy and miss butter on your toast real bad, this spread is for you. Every piece of toast needs some sort of salty goodness on it to make you feel like all is right with the world. And it is my friends, it is.
TAHINI MISO SPREAD

3/4 cup organic raw tahini
1/4 cup organic white miso
2 Tbsp nutritional yeast flakes

Method: Put all ingredients into a bowl and stir until well blended. Keep refrigerated.

SPRING SALADS

Weekly trips to the Farmer's Market this time of year always include a stop at the booths laden with fresh salad greens.  Good thing many farmers around here have hoophouses or we'd be in big trouble considering all the snow and cold weather we've been having on the East Coast.  To keep things exciting on the dinner table, I try to make new salad dressings every once in a while.  This creamy, savoury Miso-Tahini Dressing is a definite keeper.
MISO-TAHINI SALAD DRESSING

1/4 cup organic tahini
1/4 cup water
3 Tbsp fresh organic lemon juice
2 Tbsp organic white miso paste
1/2 tsp organic sweet paprika
1 tsp maple syrup
1/4 tsp sea salt

Method:  Put all ingredients in a blender and mix until creamy.

The salad featured in the photos is a mesclun blend with carrot shavings, sunflower seeds, purple sauerkraut, sunflower sprouts, and feta cheese.

SUPER HEALTHY CHOCOLATE COCONUT BLOBS with Flaxseed, Almond Butter and Tahini

There is nothing better that a decadent treat that you can feel really good about eating.  These Chocolate Coconut Blobs are so good, I find it really hard to stop at just one.  The trick to these little suckers is eating them frozen.  The freezing element has absolutely nothing to do with extending shelf life because they will not last long in your house.
SUPER HEALTHY CHOCOLATE COCONUT BLOBS
(adapted from "The Maker's Diet" by Jordan Rubin)

1 cup ground organic flaxseeds
1/2 cup organic tahini
1/2 cup organic almond butter (roasted or raw)
1/4 cup organic hemp nuts
6 Tbsp organic cocoa powder
1/4 tsp sea salt
1/3 cup local honey
2 Tbsp organic extra virgin coconut oil
1 tsp organic vanilla extract
1 tsp organic almond extract
1/2 - 1 cup organic shredded coconut

Method:  Combine all ingredients in a bowl and stir well.  With a spoon or your hands, form into balls and roll in the coconut.  Freeze and enjoy.

STEAMED QUINOA, DANDELION AND HALIBUT with Lemon Tahini Sauce

So I am on a Spring Cleanse that requires I forego most carbs, sugars, fruits, fermented foods, vinegars, yeasts and dairy.  Which led me to the idea for this meal tonight.  You can't really see it because it is hiding underneath this AMAZING tahini sauce.  I used to make this sauce all the time using tamari, but now I have to use Bragg's Liquid Aminos instead, and boy am I glad.  The stuff is amazing.  I love it!  Hope you do too!


LEMON TAHINI SAUCE
1/4 cup freshly squeezed organic lemon juice
1/4 cup e.v olive oil
1/4 cup organic flax seed oil
1/4 cup Bragg's Liquid Aminos
1/3 cup organic tahini
3 cloves organic garlic
1 Tbsp maple syrup (or for this cleanse I used one pouch of stevia powder)
1/8 cup water

Method:  Blend all ingredients together and serve over broiled fish, boiled dandelion and steamed quinoa.
