POT ROAST WITH GARLIC MASHED

Autumn is definitely here, the days are cooler and the kitchen is warming up.  Pot roast is the ultimate comfort food, especially when you serve it with mashed potatoes.  The great thing too is that you have to make this meal early because it takes 4 hours to cook in the oven.  That way you can cozy up with a book or finish little projects you have going on.  I took the time to finish sewing up the diapers I am making for the baby.  Sigh.....loving the season.
POT ROAST with Garlic Mashed Potatoes

2 Tbsp organic vegetable oil
1 5-6 pound organic and/or pasture raised beef chuck roast or any other cut suitable for pot roast
sea salt and pepper
1 cup organic beef or chicken stock
1 1/2 cups organic red wine
3 organic onions, cut into wedges
4 cloves organic garlic, chopped
2 organic bay leaves
3 sprigs fresh organic thyme
2 Tbsp organic tomato paste
2 pounds organic carrots, cut into chunks
1 organic parsnip, cut into chunks
2 celery stalks, chopped

Method:  Preheat oven to 350*.  Heat the oil over medium high heat.  Season the roast with sea salt and pepper.  Brown the meat on all sides and then add the stock, wine, herbs, onion, garlic and tomato paste. Bring to a simmer, cover and place in the oven and roast for 3 hours.  Then add the carrots, parsnip and celery.  Cook until the vegetables are tender, about 1 more hour.  Serve on garlic mashed potatoes.

GARLIC MASHED POTATOES
Just add chopped raw garlic to your mashed potatoes.....

BEAN SALAD with New Potatoes and Snow Peas

I had no idea what I was going to make with the beans I had soaking all day.  This salad was easy, and used all the spring bounty I had sitting in the fridge and cupboard.  I used dried beans, but of course you can always used canned, just make sure you buy Eden Organic canned beans, because their cans are plastic BPA free!

BEAN SALAD with New Potatoes and Snow Peas

1 1/2 pounds small organic new potatoes
1 1/2 cups cooked organic kidney beans
1 1/2 cups cooked organic chickpeas
1 1/2 cups cooked organic pinto beans
6 oz steamed snow or string beans, cut in half
1 bunch organic green onions
1/2 cup e.v olive oil
1/4-1/2 cup organic local apple cider vinegar
1-2 tsp local honey
2 cloves organic garlic, smashed and chopped finely
1/4 tsp organic red pepper flakes
1-2 tsp organic dijon mustard
2-4 tsp umeboshi vinegar
sea salt and pepper
1/4 cup minced fresh organic parsley leaves

Method:  Boil the potatoes in salted water until tender.  Meanwhile, whisk the oil, vinegar, honey, garlic, red pepper flakes, mustard, salt and pepper together in a small bowl.  Drain the cooked potatoes and keep whole or cut in half.  Pour some of the salad dressing on the potatoes while they're still hot so they soak up the flavour.  Combine the potatoes with the beans, peas, scallions and parsely.  Stir in the rest of the dressing.  Allow to marinate for at least 30 minutes before serving.  Check for saltiness and adjust as necessary.

CRISPY BBQ TOFU

I was a vegetarian for many, many years and this was my all time favorite comfort food recipe.  I think it's because it reminded me of all those yummy, greasy, sparerib and chicken wingy type foods I ate growing up.  For the ultimate meal, serve this with mashed potatoes and frozen corn!  We were halfway there tonight, minus the corn.  We didn't really have enough potatoes, so I added a turnip into the pot which was a great addition that boosted our vegetable intake.  That lovely salad you see in the photo is one of my cabbage and kale jobbies I've already posted, so take your pick from the recipe index, and enjoy!

CRISPY BBQ TOFU 

1 lb organic extra firm tofu, cut into 1/4" slices
2 Tbsp organic flour
2 Tbsp organic cornmeal
1 1/2 tsp organic poultry seasoning
2 tsp nutritional yeast
1/2 tsp sea salt
1/4 tsp fresh organic black pepper
2 Tbsp organic dijon mustard
4 Tbsp organic vegetable oil for frying

Sauce: 1/2 cup organic ketchup
1/3 cup coconut sugar, honey or maple syrup
2 Tbsp organic lime juice
2 cloves organic garlic, minced
1 organic onion, minced
4 Tbsp worcestershire sauce
1 tsp hot pepper sauce

Method:  Make your sauce by combining all the ingredients in a small saucepan and bring to a boil.  Simmer on low heat for 20-30 minutes.
     On a plate mix flour, cornmeal, poultry seasoning, nutritional yeast, sea salt and pepper.  Brush tofu with the mustard and then roll in the cornmeal mix.  Set aside.
     Heat 1 Tbsp of oil in a heavy skillet over medium heat, place 4 slices of tofu in the skillet and fry until golden brown.  Keep warm in an oven on low heat.  Repeat.  Serve with sauce and enjoy.
